Chef Dominique Ansel’s dessert love letter to New York City
Description: This iconic capsule collection features four new pastries inspired by the things people love about New York City, including:
- A Bite of the Big Apple – being New York City’s nickname, our pastry version of the Big Apple is made with apple gelée, fresh Gala apple, and vanilla bavaroise, set atop vanilla sablé with a hint of sharp cheddar.
- New York Slice – a slice of “pizza” that is actually a strawberry tart, with fromage blanc mousse, fresh sliced strawberries, strawberry basil jam, kirsch-soaked almond biscuit, and vanilla sablé.
- Bodega Coffee Cup Tiramisu – a nod to those iconic blue coffee cups at the corner bodega, our take on a classic tiramisu with espresso- & Kahlua-soaked almond biscuit, mascarpone cream, and 66% dark chocolate mousse, complete with a white chocolate “lid” on top.
- Haute Dog – inspired by the hot dog carts along Central Park, our “Haute Dog” is made with raspberry crémeux set atop fluffy biscuit à la cuillère (ladyfingers) soaked in coconut syrup, topped with passion fruit curd “mustard” and shredded coconut “relish.”
Storage: Please keep all cakes refrigerated until ready to serve. Do not keep cakes outside for more than 30 minutes. Handle delicately as our cakes are very fragile. Best eaten within 2 days of purchase.
